Ingredients:

  • 8 baby abalone (shucked and cleaned)
  • 2 cloves garlic
  • 1 tablespoon sweet soy sauce
  • 1 teaspoon dark soy sauce
  • 1 tablespoon olive oil
  • 4 drops fish sauce (optional)
  • 2–3 tablespoons butter
  • Fresh coriander (for garnish)
  • Lemon (for serving)

Method:

  1. Gently brush the abalone to finish cleaning, then rinse with water. If the abalone is stiff, tenderize the meat. Pat dry with a paper towel and slice thinly, cutting down towards the bottom of the foot.
  2. Mince the garlic and combine it with 1 tablespoon of sweet soy sauce, 1 teaspoon of dark soy sauce, 1 tablespoon of olive oil, and the abalone. (Optional: Add a few drops of fish sauce, but not more!)
  3. Mix the ingredients and let the abalone marinate for 30–60 minutes.
  4. Melt 2 tablespoons of butter in a pan over medium-high heat until it just starts to foam.
  5. Add the marinated abalone slices and fry for 1–2 minutes, or until just cooked. Remove from heat immediately to avoid toughening the meat.
  6. Serve with a garnish of fresh coriander and a slice of lemon over couscous.
