Ingredients:
- 8 baby abalone (shucked and cleaned)
- 2 cloves garlic
- 1 tablespoon sweet soy sauce
- 1 teaspoon dark soy sauce
- 1 tablespoon olive oil
- 4 drops fish sauce (optional)
- 2–3 tablespoons butter
- Fresh coriander (for garnish)
- Lemon (for serving)
Method:
- Gently brush the abalone to finish cleaning, then rinse with water. If the abalone is stiff, tenderize the meat. Pat dry with a paper towel and slice thinly, cutting down towards the bottom of the foot.
- Mince the garlic and combine it with 1 tablespoon of sweet soy sauce, 1 teaspoon of dark soy sauce, 1 tablespoon of olive oil, and the abalone. (Optional: Add a few drops of fish sauce, but not more!)
- Mix the ingredients and let the abalone marinate for 30–60 minutes.
- Melt 2 tablespoons of butter in a pan over medium-high heat until it just starts to foam.
- Add the marinated abalone slices and fry for 1–2 minutes, or until just cooked. Remove from heat immediately to avoid toughening the meat.
- Serve with a garnish of fresh coriander and a slice of lemon over couscous.
