This recipe is an alternative to the one above and was shared with us by an abalone fan! Enjoy! We love the idea of using some of the brine from the can as a binder – such an effective way to add depth to the flavor.

Ingredients:

  • 2 cans of minced abalone
  • 2 eggs
  • 25ml oil
  • Coriander, to taste
  • Spring onion (quantity to taste)
  • 2ml salt
  • ½ cup flour
  • 2 tsp baking powder

Method:

  1. Place the minced abalone in a blender and blend until finer.
  2. Add the eggs, oil, coriander, spring onion, and salt. Blitz until well combined.
  3. Gradually blend in the flour, adding abalone brine until you reach a consistency that allows you to form the mixture into “koekies.”
  4. Fry in a bit of olive oil or sunflower oil until golden brown on both sides, turning carefully.
