This recipe is an alternative to the one above and was given to us by a abalone fan! Enjoy! Love the idea of using some of the brine in the can as a binder – such an effective way to add depth to the flavour.
Ingredients:
2 cans of minced abalone
2 eggs
25ml oil
Coriander to taste
Spring onion
2 ml salt
½ cup flour
2 tsp baking powder
Method:
Place minced abalone in blender and whizz until finer.
Add eggs, oil, coriander, spring onion and salt. Blitz until combined.
Blend in flour and add in abalone brine until you reach the right consistency to be able to handle the mixture to form “koekies”.
Fry in a bit of olive oil / sunflower oil, until brown on both sides, turning carefully.
